Guava Ice Cream

29th January 2013
To all my friends and readers, I'll be back next week. Not due to stressed and I'm still in one piece. I'm busy baking Chinese New Year cookies and same time I'm tied down as a domestic engineer doing spring cleaning.  Be seeing you soon, stay tuned!

Let me share with you my delightful and heavenly Guava Ice Cream.
When you stressed you eat ice cream, chocolate and sweets. Because "Stressed" spelled backward is DESSERTS.

Guava ice cream with crepe and guava coulis

I scream, you scream, who don't like ice cream? I had this ice cream with crepe for my breakfast this morning. Any of my friends here eat ice cream for breakfast? LOL

Guava Ice cream
Ingredients
2 cups heavy cream
1/2 cup happy cow milk
1/2 cup sugar
5 large happy chicken egg yolks
1 cup concentrated guava juice
1 tsp pure vanilla extract
Few drops of pink colouring ( optional )

You can serve the guava ice cream on it's own or serve with a spoonful of guava coulis.

Frozen guava juice and home made guava coulis.

1/  Combine  milk, sugar in a medium pot over medium-low heat and cook, stirring until the sugar is dissolved and the mixture is warm.
2/  Place the happy chicken egg yolks in a small bowl and whisking constantly but make sure don't break your wrist. Add about 1/2 of the milk mixture to the eggs and stir until smooth.

3/  Gradually add the yolk mixture to the pot, again whisking constantly. Add in the guava juice and few drops of pink coloring.
4/  Cook, stirring often, until the mixture coats the wooden spoon. Stir in the vanilla extract and mix well.
5/  Let it cool to room temperature and stir in the heavy cream and mix well.
6/  Then cover with cling wrap and chill in the refrigerator overnight.
7/  Freeze in an ice cream machine according to the manufacturer’s instructions.

Making Ice Cream without ice cream maker

To me......there is no such thing as a little ice cream. ^-^

1/  Making ice cream can be done without the use of ice cream maker. An electric mixer or food processor can be used to break up the ice crystals during the freezing process.
2/  Follow above method from step 1 to step 6.
3/  Then place ice cream mixture in the freezer and allow the mixture to freeze for 2 hours.

Life is like an ice cream, taste it before it melts.

4/  Remove from freezer and beat mixture to break up the ice crystals that are beginning to form. Repeat the freezing and beating 3 times for a smooth and creamy ice cream.
5/ The ice cream should be thick but soft to scoop. If not thick enough return to freezer for additional freezing time and beat the mixture again.
6/ Once ice cream thickened properly, pour into air tight container to freeze till set.
Note: You can pour the ice cream mixture into the heart shape plastic mold to make heart shape ice cream. Great for coming valentine day. Make this lovely ice cream for your loved one.

One spoon in my mouth....... fluttering my eyelashes, mmmhhhhh........YUMMYLICIOUS!

Crepe Recipe
1/2 cup milk
1 tbsp melted butter
1 Chicken Little egg
1 tbsp sugar
1/2 cup flour

1/  Beat the egg lightly then add with the milk.
2/  Mix the milk mixture with sugar and  flour, mix well.
3/  Pour in the butter and stir till well blend and sieve the batter.
4/  Heat a 6 inch non stick pan, brush with some butter.
5/  Scoop 2 tbsp of batter and cook the crepe on both side till lightly brown.

Guava Coulis
1/2 cup chopped guava
1/2 cup pink guava juice
1 tbsp lemon juice
1-2 drops pink colouring

1/  Blend the chopped guava, guava juice and 1 tbsp lemon juice in the blender for 2 mins or until smooth.
2/  Add 1-2 drops of pink colouring, mix well. Not too much colouring otherwise your guava coulis will look like battle field.
3/  Chill in fridge until ready to use.

Pink Guava
White Guava

Guava Float

Another way to enjoy guava ice cream.

1/4 piece fresh guava - chopped into small cubes
1 cup concentrated guava juice
1 tbsp lemon juice
1/2 cup ice cubes
2 scoops guava ice cream

Mix chopped guava, concentrated guava juice, ice cubes, lemon juice in the blender and blend for 2 mins.
Pour into the glass and drop in 2 scoops of guava ice cream, serve immediately. Enjoy the refreshing glass of guava float.

Toothsome and satisfying, don't worry after eating this you don't have to make an appointment with your dentist. ^-^

A spoonful of heavenly guava ice cream with crepe.

All my ice cream are made without using ice cream maker, it still taste as good and smooth. Only thing a little bit more work taking in and out of the freezer. But it's ok... for me I don't mind.
