Bean Sprout Croquette

Hello, I'm back in action.  I just finished my 6 minutes upper body work out. It was pretty easy, let's do it together.

Arm down............  pick up food.
Arm up.................. put food in mouth.
Switch arms............repeat until desire....
Soooo easy right? Easier than you play Mandolins under the moonlight.  Anyone of you wanna join me for this upper body toning workshop? Don't hesitate to sign up, all are welcome. LOL

Arm up... put food in mouth.  Mmmmmm......

Bean Sprout Croquette

Served 2 serving in one plate, save the trouble to wash extra dishes. LOL

Bean Sprout Croquette

Ingredients ( Serving Size: 4)
100gm bean sprout
150g ground or chopped chicken or beef
1 medium potato
½ onion
2 tablespoon of butter
1 clove of garlic, minced
½ piece ginger, minced
1 tbsp soya sauce
1/2 tbsp corn flour
a dash of sesame oil
salt and pepper to taste

This croquette is an excellent finger food, great for parties.

COATING
Plain flour
2 egg  lightly beaten, do not beat until your wrist sore
Bread crumbs
Oil for frying

1/  Cut potatoes into cubes and boil with some salt until cook. Then drain the water and roughly smash the potatoes.  ( I smash half only. )
2/  Chopped  the onions.
3/  Season  mince meat with soya sauce, sesame oil, corn flour, pepper. Mixed well.
4/  Heat butter in a frying pan and add onion, garlic, ginger, and fry until fragrant and garlic slightly brown.
5/  Add ground meat and stir fry, flavoring with salt and pepper. Remove from heat and place into a bowl to cool.

Stir fry few minutes till the meat is half cook.

I pan fry in non stick pan with little oil, can eat without guilt and need not have to worry too much that my waistline might split.

6/  Add the smashed potatoes. I smashed half and left the other half in cubes form.
7/  Break the bean sprouts and add in to the potato and meat.  Mix into a consistent batter.
8/  Divide batter into eight portions and pat into circular shapes. Lightly cover in flour, dipped in egg and roll on the bread crumbs.
9/  Heat up oil in wok to deep fry or you can use a non stick saucepan to pan fried until cook. Drain on paper towel.
10/  Serve with rice.

One spoon in the mouth..... this is an excellent appetizer.

You can squeeze some fresh lemon juice on the croquette to enhance the flavor.

It burn very fast, fry with low heat and don't get distracted by other activity while cooking this croquette.
