PANDAN LAYER CAKE AND AWARDS

 
My Kak Queenie, this is for you, hehehe ENJOY! *hugs & muahhzz..*

Chiffon Cake

Ingredients (A)
4 egg yolks
60 mls corn oil
120gm cake flour /plain flour
1 tsp baking powder
60 gm castor sugar
4 tbsp milk
1 tsp pandan paste

Ingredients (B)
4 egg white
60 gm castor sugar
1/2 tsp cream of tartar

PANDAN CUSTARD

500 mls thick santan
150 gm sugar
4 tbsp hoen kwe powder
2 tsp agar agar powder
2 tsp instant jelly
1 tsp pandan paste
100 gm shredded coconut

My dear Sha, don't forget your tissues and bib & thank you for torturing me day and night with your bombastic cooking. hehehehe

My dear Elisabeth, one of the ingredients in this cake @ Pandan Paste, reminded me of the  UNFORGETTABLE GREEN CHRISTMAS, only you and I know the greenly story.LOL

Method
1. Line a 8 in cake pan with greaseproof paper
2. Pre heat oven at 180 deg c
3. Sift flour and baking powder
4. Mix all the (A) ingredients and cream until smooth, keep aside
5. Beat egg white with cream of tartar until frothy, add sugar and cream until stiff
6. Fold egg white mixture into egg yolk mixture lightly until well blend
7. Bake at 180 deg c for 40 to 45 mins
8. Cool completely and slice the cake into two

To cook the pandan custard
1. Mix coconut milk with instant jelly, agar agar powder, sugar, pandan paste. Mix well.
2. Mix hoen kwe powder with 2 tbsp water, mix well & keep aside
3. Cook the coconut mixture until boil then add the hoen kwe powder and cook till thicken.
4. Use immediately.

To assemble the cake
1. Put 1 part of the cake on a plate and use a cake ring or 8in cake pan
2. Spread half the pandan custard on the cake, let it set slightly, place the other piece of cake on top.
3. Spread the balance pandan custard on top the cake.
4. Chill in the fridge till set
5. Decorate the side and top with shredded coconut
6. Slice the cake and serve with ice coffee

    Wow! Your Pandan layer cake looks scrumptious & love the green color so much! Simply divine! I so tempted to try this recipe! Saw once at another M'sian blog just few weeks ago. To tell the truth I've never bake a sponge cake before. And I still have some pandan paste that I don't what to do with it! I love your customize recipe too! What a great idea!   5. Hi Diane, thanks for dropping by. The pandan paste is only available in Asian country. In English it's call Pandanus amaryllifolius. It's a tropical plant in the Pandanus (screwpine leves)

    Instant jelly and agar agar powder are two different ingredients. You need both of this for the custard.
    Instant jelly is white in color and the texture is very fine. You can get it from any bakery ingredients shops.

LOL! and queenie so cruel, she asked me to eat more cakes, then put on weight then we can go zumba together! sob sob!!

  64. Hi アンゼエリン,instant jelly and agar agar powder not the same. No, you can't use gelatin power for this recipe. Gelatin is for other type of dessert like cheese cake or gummy bear.

    You can get instant jelly at any baking ingredients shop in small sachet of 50gm or 100gm.

    This would be the perfect time to share those photos of my Green Christmas...gone wrong! Pandom Paste all over the inside of the contents, but I must say it smelled so incredible!
    I could never make a superb special cake like this, with the special ingredients, that only could be found in your area!
    The cake is superb, and gorgeous, and so moist, delicious!

    I am literally drooling over the screen for it...LOL. So, so, amazing!
    Thank you, once again for your generous goodies...still enjoying the lovely coffee, hot, and cold, also have to make my cream puffs to use with the custard powder you sent, among a few other goodies!

    I could not comment...had such an awful time with my computer freezing up, since Sunday. Now, I fixed the problem!

    Whenever I took out my pandan paste, I will think of the GREEN CHRISTMAS, LOL I still feel very sorry about the shocking mess.

Mel....kek ni konsep dia sama ye dgn kek karamel yang tengah hot sekarang ni...i memang suka jenis-jenis kek yang campur dgn jelly or karamel nih...sedap dan tak muak sangat...dulu Bohemia Jusco selalu ada kek nih....sedap...u pandailah part2 memasak lauk and baking ni...i pulak, kalau lauk tu bolehlah lagi, tapi kalau part kek and kuih, fail betullah....geram tau....bila nak pandai cam u nih...
