KUIH SERI KAYA

There is an array of authentic Nyonya desserts which everyone loves. Nyonya desserts are varied and extraordinary. The most common flourishing ingredients are grated coconut, coconut milk, pandan leaves ( screwpine leaves) and gula melaka ( palm sugar ) Their base and texture are built on a group of starches like rice flour, glutinous rice flour, tapioca flour and mung bean flour. They play a most important part in giving kuih their distinctive soft, pudding like yet firm texture.

Kuih Seri muka is a two layered dessert with steam glutinous rice forming the bottom half and a green custard layer.


KUIH SERI KAYA
(Recipe courtesy from my 4th SIL)

INGREDIENTS – BOTTOM LAYER
1 ½ cups glutinious rice
½ pack (100ml) thick coconut milk mix with water to get 2 cups thin coconut milk (I use 320mls)
2 teaspoon salt (or to taste)

METHOD
1/    Boil rice with coconut milk and salt till the milk dries up.
2/    Grease an 8 in tray, place the rice in a tray and steam for 20 minutes.
3/    Pressed the boiled rice with a glass to make it compact.



INGREDIENTS  - TOP LAYER
3 eggs
¾ cups sugar
1 ½ packet coconut milk (300 ml)
2 pandan leaves
2 tablespoon cornflour
2 tablespoon flour
1 tsp pandan paste

METHOD
1/   Beat eggs and  mix in sugar, pandan paste, cornflour and flour.
2/   Add in coconut milk slowly and put in pandan leaves.
3/   Boil over a slow fire and keep stirring until mixture thickens but still runny.
4/   Discard pandan leaves, pour  custard on top of pressed glutinous rice and steam for 10 minutes.
5/    Cool completely before cutting.

      This nyonya dessert is very famous, most Asian love it but not easy to get the correct texture for the custard. It took me several attempts to get the correct texture.

    Lama tak bikin ini kuih i think almost 5 years!!! tapi minggu lepas baru makan beli punya ley!! you punya kueh nampak sedap sangat!

    Nampak set sangat cantik dan kemas.. kalau macam tu i nak cuba buat guna you punya resipe... itu cara nampak lain sebab dia masak dulu meh?? patutlah cantik aje setting... i really realyyy suka!! mudah nak cuba.. sebab i ni bukan suka leceh2 punya kueh.. kalau buat leceh aje sure jadi tak cantik!! hhaahhaa.. mungkin nak kena mandi bunga bawah jambatan baru hokey!! hehhh

    Okay Amoi.. sekarang juga i mahu bikin.. ikut you punya resipe okay! tak sabar2 sudah ni...

    My wife right now making that blue and white kaya cake, as we have visitors coming.
    Your this cake will make any Nyonya pat you on the shoulder, and if not married at least 3 auntie Kay Poh Chi from "guarantee no chabut Match making Sdn Bhd will come see you.....ha ha ha.

    Women who can make cakes like you don't grow on trees.
    I for one prefer these Nonya cakes above anything else......
    Amelia, I have seen many of these Nyonya kueh seri kaya, but must say yours is one of THE BEST I've seen now.
    And you not a Nyonya that makes it even more outstanding!

      I'm a dessert and kuih queen, I eat more dessert than I eat rice, hahaha
      I had a full range of nyonya kuih recipes and I always loves nyonya kuih since young. But after married only learned how to make but all self thought thru trial and error.

      This seri kaya took me few attempts to get the correct texture. Not easy to get a smooth surface.

      I like your "Guarantee No Chabut Match Making Sdn Bhd" hahaha Got such match making company meh? Love your humor, always made me laugh.

Luckly I can get frozen pandan leaves from Asian grocery store so that I can try these delicious kuih! Love your new header, feel like lepak at the beach & do nothing the whole day !!       There are 3 types of name for this dessert, kuih seri kaya, kuih salat, kuih seri muka but not sure which come first. But mostly people call this seri muka cos of the shinning surface on top the kuih.

    1. Hi Balvinder, nice to see you again. You can get the pandan leave in Asian or Vietnamese store. In oversea they sell frozen pandan leaves, just defrost and ready to use.
