Mini Tortillas with Chickpea Curry & Salsa



Tortillas 
Ingredients
1 cup flour
1 tbsp oil
1/2 tsp salt
1/2 cup water


1/  Sift flour in a mixing bowl, add salt and mix well.
2/  Add oil and half the water, (DO NOT POUR ALL THE WATER)  mix into a dough.
If the dough too dry add water. If dough too wet, add flour.
3/  Knead the dough until smooth,cover with damp cloth and rest 30 mins.
4/  Divide dough into 4 portion, dust dough with flour and put between two plastic sheet and roll round approximate 1/8" thickness.



5/  Heat up a non stick pan, cook the tortilla for 1 min on each side.

6/  If it puffs, you can poke the  puffed area to release the steam.


7/  Cover the tortillas with towel to keep them warm.
8/  Serve with chickpea curry and salsa.

Chickpea Curry My Style

300gm cooked chickpeas
1 tomato - cut cube
1 onion - cut cube
3 sprigs curry leaves
1 in ginger - sliced thinly
1 red chilli - sliced thinly
2 bird eyes chilies  - sliced thinly
2 clove garlic - sliced thinly
2 tbsp oil
1 tbsp curry powder
1/2 tsp turmeric powder
1/2 tsp garam masala
2 tbsp water
1/2 bowl of water
1 tsp coriander seed - pound
5 cardamon seed
1/2 tsp mustard seed
2 tsp sugar
1 tsp salt to taste
1/4 tsp pepper powder

1/  Combined curry powder, turmeric powder, garam masala with 2 tbsp of water and mixed into a paste.


 Pound coriander seed corsely

Tomato, onion, chillies, ginger, garlic.

2/  Heat up 2 tbsp of oil, add garlic, onion, ginger and stir fry until slightly brown.
3/  Add cardamon seed, pounded coriander, mustard seed, red chilli, bird eye chilli, tomato and fry for 3 to 4 mins.
4/  Add curry paste and mixed well, stir fry for another 2 mins, add chickpea and curry leaves, mixed well.


5/  Add 1/2 bowl of water and simmer the chickpea. Add salt,sugar to taste. Cook till gravy thicken. When cook add the pepper and mix well.
6/  Serve with tortillas or rice.




Curry leaves contains 18 amino acids and volatile oils which contributes a very specific fragrance.
Take 22 leaves, bruise slightly and soak overnight in a glass of  water. Sieve and drink first thing in the morning . You can drink your tea/coffee 1/2 hour later. It help to protects liver and liver cells.

Curry leaves or karapincha helps to reduce high blood pressure, heals gastritis, diabetes, reduce weight and relieves flatulent.


Salsa
This is my cleared stock salsa, used whatever left over that's in my fridge.


Ingredients
1 small bunch of grapes
2 slices of honey melon
1 small cucumber
2 tbsp yogurt
3 tsp sugar
1/2 tsp salt


1/  Remove cucumber seed and cut into cubes. Season with salt and keep aside.
2/  Cut honey melon into cubes.
3/  Mixed grapes, honey melon with cucumber.
4/  Add sugar & yogurt to mixed well.
5/  Chilled in fridge till cold and serve with tortillas.
