For nothing better to do, my dinner and dessert......

What I hear or read, I try out, my own way. Fried rice with large prawns, fried plantains & fried egg.

I learned from the husband of Mrs. Lee this is how she makes fried rice for him. So for nothing better to do,  I try, complete with iced coffee, large prawns and fried plantains.
Thank you to Mrs Lee for the plantain recipe and wonderful ideas.

Fried Rice

Ingredients ( 2 serving )

2 bowl cooked rice (cool completely)
1 small capsicum (diced)
1 small onion (slice thinly)
2 tbsp dried prawns (wash and drain dry)
2 cloves garlic (chopped)
2 bird eyes chili (slice thinly)

2 tbsp oil
1/2 tsp salt or to taste
1/4 tsp pepper
2 tsp light soya sauce
1/2 tsp sesame oil

Garnishing 
Fried shallots
Chopped spring onion
1/4 piece lemon


Method for fried rice

1/  Heat oil in wok, saute garlic, onion and dried prawns until fragrant and garlic slightly brown.
2/  Add capsicum, bird eyes chili and salt, stir fry for 1 min.
3/  Add the cooked rice  and mixed well. Add pepper, light soya sauce and sesame oil. Add salt according to your taste.
4/  Stir fry for about 5 mins until you smell fragrant  scent.  Remove from wok and put on serving plate.

Grilled Prawns

4 large king prawns
2 tsp L & P worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
2 tsp rum ( For muslim please omit this and replace with ginger juice)
1 tsp oil

Method

1/ Trimmed the prawns legs, wash and pat dry with kitchen  towel.
2/  Season the prawn with L & P worcestershire sauce, salt, pepper and rum or ginger juice.
3/  Cover with cling wrap and keep in the fridge for 4 hours.
4/  Thread the prawns with bamboo skewer or BBQ skewers lengthwise to prevent curling. This is good if you want your prawns nice and straight.
5/  Grilled the prawns 3 mins on each side or until turn pink and are lightly charred on both side. Do not overcook or it taste rubbery. Prawns are best grilled quickly but not over too high of  a heat. Prawns are done when the entire outside surface has changed color.

Note: You do not have to devein prawn as long as  the prawns are properly cooked. The vein isn't going to cause any health risk.


Fried Plantains
2 pieces ripe plantains
4 pieces spring roll pastry
Brown sugar



Method
1/  Peel plantains and cut half.
2/  Slice halves lengthwise and wrap with spring roll pastry.
3/  Heat oil in wok. Fried plantains in hot oil using low heat, cook until both side slightly brown.
4/  Remove from oil and transfer to paper towel to drain off excess oil.  Sprinkle brown sugar immediately on both side of plantains.


The crispy skin with melted plantain is truly a piece of heaven. I ate it, rolled eyes 3 times, smack my thighs , DELICIOUS!!!

Tomato sauce and BBQ sauce

I made these, I ate it, and saw stars and birds singing. Yes, it is delicious. A totally different way of eating fried rice. Pity I don't know how to cry out cowboy style. I think I saw in Uncle Lee's blog, he cry out " YeeeeeHaaaa!!! LOL

After dinner,  dessert time....
Sweet Wheat Grain dessert ( Bubur Terigu )


Ingredients

150gm wheat grain
1000 mls water or more
sugar to taste
1 tsp salt
250 mls thick coconut milk

Method

1/  Wash and soak  wheat grain for 1 hour. Drain off water.
2/  Boil the wheat grain with 1000mls water until grain is very soft.
3/  Do not cover the pot cos it over flow easily and you will have a hard time cleaning your stove. Boil in medium heat and don't forget to stir every now and then. Add more water if it evaporated but don't add to much at a time. Your truly burnt off 1 pot previously when cooking this and thanks to angry bird. LOL
4/  When the wheat grain is cooked add 1 tsp salt and sugar to your taste. Stir until sugar melt.
5/  Add the thick coconut milk and mixed well. Remove from stove immediately, do not let it boil.
6/  Serve hot or cold and enjoy.

Pulut Inti  ( Glutinous rice with grated coconut )

Ingredients

1 1/2 cup glutinous rice
300 mls coconut milk
2 tsp salt

1/  Wash the rice and soak for half an hour.
2/  Mix all the ingredients and cook in rice cooker.
3/  When cook, fluff up the rice.
4/  Cut banana leaves to 4 x 6 inch. Wash and scald banana leave in hot water, wipe dry.
5/  Take 2 tbsp rice and top with 1 tbsp grated coconut, wrap into parcel and serve immediately.
6/  I like mine to chill in the fridge and serve cold
 
Coconut Filling

150gm grated coconut
1 tbsp castor sugar
75gm palm sugar./ gula melaka
1/2 tsp salt
1 tbsp water
2 tsp tapioca flour  mix with 1/2 tbsp water

Method
1/  Chopped palm sugar/gula melaka into small pieces
2/  Boil the palm sugar/gula melaka, sugar, salt and water till both sugar melt.
3/  Add grated coconut and lower the heat.
4/  Cook till almost dry. Add tapioca flour mixture, mixed well and cook for another 5 mins. 
5/  Remove to tray and cool before use.




 Overall I had a scrumptious and delightful home cook gourmet meal my own way.

Mini Tortillas with Chickpea Curry & Salsa



Tortillas 
Ingredients
1 cup flour
1 tbsp oil
1/2 tsp salt
1/2 cup water


1/  Sift flour in a mixing bowl, add salt and mix well.
2/  Add oil and half the water, (DO NOT POUR ALL THE WATER)  mix into a dough.
If the dough too dry add water. If dough too wet, add flour.
3/  Knead the dough until smooth,cover with damp cloth and rest 30 mins.
4/  Divide dough into 4 portion, dust dough with flour and put between two plastic sheet and roll round approximate 1/8" thickness.



5/  Heat up a non stick pan, cook the tortilla for 1 min on each side.

6/  If it puffs, you can poke the  puffed area to release the steam.


7/  Cover the tortillas with towel to keep them warm.
8/  Serve with chickpea curry and salsa.

Chickpea Curry My Style

300gm cooked chickpeas
1 tomato - cut cube
1 onion - cut cube
3 sprigs curry leaves
1 in ginger - sliced thinly
1 red chilli - sliced thinly
2 bird eyes chilies  - sliced thinly
2 clove garlic - sliced thinly
2 tbsp oil
1 tbsp curry powder
1/2 tsp turmeric powder
1/2 tsp garam masala
2 tbsp water
1/2 bowl of water
1 tsp coriander seed - pound
5 cardamon seed
1/2 tsp mustard seed
2 tsp sugar
1 tsp salt to taste
1/4 tsp pepper powder

1/  Combined curry powder, turmeric powder, garam masala with 2 tbsp of water and mixed into a paste.


 Pound coriander seed corsely

Tomato, onion, chillies, ginger, garlic.

2/  Heat up 2 tbsp of oil, add garlic, onion, ginger and stir fry until slightly brown.
3/  Add cardamon seed, pounded coriander, mustard seed, red chilli, bird eye chilli, tomato and fry for 3 to 4 mins.
4/  Add curry paste and mixed well, stir fry for another 2 mins, add chickpea and curry leaves, mixed well.


5/  Add 1/2 bowl of water and simmer the chickpea. Add salt,sugar to taste. Cook till gravy thicken. When cook add the pepper and mix well.
6/  Serve with tortillas or rice.




Curry leaves contains 18 amino acids and volatile oils which contributes a very specific fragrance.
Take 22 leaves, bruise slightly and soak overnight in a glass of  water. Sieve and drink first thing in the morning . You can drink your tea/coffee 1/2 hour later. It help to protects liver and liver cells.

Curry leaves or karapincha helps to reduce high blood pressure, heals gastritis, diabetes, reduce weight and relieves flatulent.


Salsa
This is my cleared stock salsa, used whatever left over that's in my fridge.


Ingredients
1 small bunch of grapes
2 slices of honey melon
1 small cucumber
2 tbsp yogurt
3 tsp sugar
1/2 tsp salt


1/  Remove cucumber seed and cut into cubes. Season with salt and keep aside.
2/  Cut honey melon into cubes.
3/  Mixed grapes, honey melon with cucumber.
4/  Add sugar & yogurt to mixed well.
5/  Chilled in fridge till cold and serve with tortillas.

Belebat Ubi aka Cassava Cake

This is my first time submit for  the Cook Like A Star @ Master chef series. Cook like a star is organized by  Zoe of Bake for Happy Kids , Anuja of Simple Baking & Baby Sumo of Eat your heart out.

Presenting Steamed Tapioca aka Belebat Ubi from Malaysia first season MasterChef cum Novelist  Cik Shahriah Abdullah
 
BELEBAT UBI



BAHAN-BAHANNYA
2 cawan ubi *blender dan tapis airnya
2 cawan kelapa parut *putih sahaja
150 gm gula melaka *hiris kasar
1 sudu besar gula pasir
2 sudu besar susu pekat
sedikit garam
daun pisang *cuci dan potong dan layurkan atas api

CARA :
1/  Campurkan kesemua bahan-bahan di atas kecuali daun pisang!
2/  Ambil 2 sudu besar adunan ubi dan bubuh di atas daun pisang. Lipat daun pisang. ( refer picture below)
3/  Kukus selama 20-25 minit.

Steamed Tapioca Cake



Ingredients
2 cups grated cassava/ tapioca
2 cups grated coconut
150gm palm sugar - chopped into small pieces
1 tbsp castor sugar
2 tbsp condensed milk
pinch of salt
Banana leaves

1/  Cut banana leaves to 4 x 5 inch, washed and scalded in hot water to soften the leaves.
2/  Peel the rind of cassava and washed properly, scrub with a soft brush.

Grated Cassava

3/  Grate the cassava and squeeze out the juice. ( I use my multi grinder to do the wander job)

 4/  Mixed all the ingredients together except the banana leaves.

 5/ Brush a little oil on the banana leave, put 2 tbsp of the cassava mixed in the centre of the leaf.

6/ Fold as shown in the picture



7/ Fold into a neat parcel.  Arrange the wrapped parcel on the stainless steel plate and steam for 20 mins.

Kermit the frog, you want to take a bite......LOL

Cassava can be cooked in various way. 

The soft boiled root has a delicate flavor and can  replace boiled potatoes in many ways. The cassava root is long and tapered, with a firm, homogeneous flesh encased in a detachable rind, about 1mm thick, rough and brown on the outside. The flesh can be chalk-white or yellowish.

Cassava roots are very rich in starch and contain significant amounts of calcium, phosphorus and vitamin C. But always take precaution when preparation of cassava cos improper of preparation can leave enough residual cyanide to cause acute cyanide intoxication and goiters and has been linked to ataxia or partial paralysis.

Uncle Lee, your favorite bingka Ubi, my compliments to thank you for your wonderful recipes. And the Native guy picture you almost got me into trouble to present "Burnlet" instead of cutlet. Next time please don't play cheat to distract me.


Baked Cassava Cake aka Bingka Ubi

 Ingredients
1kg cassava/ tapioca ( after peel and grated, weights about 800gm)
200gm sugar
400 mls coconut milk
1 cup grated coconut
2 eggs, lightly beaten
40 gm butter (melted)
1 tsp vanilla essence
few drop of yellow colouring

Uncle AL, this is for you but feast with your eyes for the time being. Get well soon and take care. Don't keep pressing the call bell to disturb the nurses. Be a good bear and don't be naughty-naughty.


1/  Peel the rind of cassava and wash properly, scrub with a soft brush.
2/  Grate the cassava and squeeze out the juice. ( Discard the juice, the yellow juice is toxin)
3/  Grease a 7 inch square cake tin and pre heat oven at 180 deg C
4/  Mixed all the ingredients together and mix well.
5/  Pour into cake tin and bake for 1 hour or until cooked.
6/  When cook, change the oven to grill mode and grill for 4 mins until slightly charred.
7/  Cool completely before cutting.


Another interesting way to serve cassava


Steam the cassava with pinch of salt. Mash the cooked cassava, knead lightly. Roll to 1/4 inch thick and cut with cookie cuter. Decorate with coriander or parsley leaves. Top the disc with coconut filling.

Coconut Filling
Ingredients
150 gm grated coconut
1 tbsp castor sugar
75 gm gula melaka (palm sugar)
1/2 tsp salt
1 tbsp water
2 tsp tapioca flour mix with 1/2 tbsp water

Palm sugar aka gula Melaka

1/ Chopped gula melaka into small pieces.
2/ Boil the gula melaka, sugar, salt and water till both the sugar melt.
3/ Add grated coconut and lower the heat. Cook till almost dry.
4/ Add the tapioca flour mixture, stir thoroughly. Cook for another 5 mins. Remove to tray and cool.
