Corn, one of the most popular and versatile vegetables, is also a good source of several nutrients. Corn is a low-fat complex carbohydrate that deserves a regular place on any healthy table. These high-fiber, fat-fighting kernels of goodness are also hearty and satisfying.

Corn is a surprising source of several vitamins, including folic acid, niacin, and vitamin C. The folic acid in corn is now known to be an important factor in preventing neural-tube birth defects.
It's just as important in preventing heart disease, according to studies that show folic acid can prevent a buildup of homocysteine, an amino acid, in the body. Long-term elevation of homocysteine has been linked to higher rates of heart disease; folic acid helps break it down.

A single ear of corn produces approximately 16 rows of kernels with about 800 total kernels.

Let me share with you a pleasant and healthy dish.
Grilled Fish With Corn and Cherry Tomato
2 piece fish fillet ( red snapper / grouper )
1 medium size corn
100 gm cherry tomato
1 small onion
2 cloves garlic
1/2 tbsp oil ( for grilling the fish )
1/2 tsp nutmeg power
1/2 tsp cinnamon powder
1.5 tsp salt or to taste
2 tsp sugar
dash of pepper
1/2 bowl water
1/2 tbsp oil/ butter
Seasoning for fish fillet
1/2 tbsp curry powder
1/2 tsp pepper
2 tsp soya sauce
1/ Clean the fish fillet and pat dry with kitchen towel. Season with curry powder, soya sauce and pepper.
2/ Cut the onion into wedges. Slice the garlic thinly.
3/ Use a sharp paring knife to cut off corn kennel from cob. Keep aside.
Method
1/ Heat up the non stick heavy bottom sauce pan with 1/2 tbsp oil.
2/ Grill the fish until cook and if you prefer, can grilled until slightly charred.
3/ Remove the fish from sauce pan and keep aside.
4/ Heat up 1/2 tbsp oil or butter.
5/ Saute the garlic and onion until slightly brown and fragrant.
6/ Add corn kennels and cherry tomato and sauteed for 2 to 3 mins. Add 1/2 bowl of water, salt, pepper, nutmeg, cinnamon, sugar and mix well.
7/ Let the grilled fish simmer together with the corn for 3 to 5 mins to enhance the flavor. Do not over cook the fish.
8/ My grilled fish with corn and cherry tomato is ready to serve.
You can serve with white rice or eat the grilled fish with corn on it's own, it taste awesome.
I love my grilled fish with slight charred, a subtle hint of smoke is one of my favorite flavor.

Apple and Corn Soup
You can take this soup as light lunch or dinner without rice.

2 chicken thighs
1 medium size carrot
2 red apples
2 corns
1/2 tsp pepper corn - crushed
1 tsp salt
2000 mls water or slightly more
Stronger connective tissue - corn contain 12 percent of the recommended daily intake of maganese per cup.
Have a side dish of beans and corn to boost the maganese content in your meal.
1/ Wash the chicken thighs and remove the skin.
2/ Bring the water to boil, add chicken and let it boil for 15 mins. Skim off the foam as it forms.
3/ Add corn and carrot, continue simmering until the chicken and carrot is cook.
4/ Add apple and let it simmer for 5 minutes.
5/ Add the salt to taste and crushed pepper corn.
