Papaya Coconut Cupcakes

Sometimes it's hard to understand but time tells the truth.
Some say that a birthday is a great time to look back at the past years. Others say is a good time to think what lies ahead. I say don't want to be old and wise, learn everything now and stop getting older.

Toast bread salad from right to left @ egg mayo/ tuna mayo/ chicken mayo

Papaya  Coconut Cupcake


Ingredients
2 cups flour
1 tsp baking soda
1/4 salt
1 cup sugar
2 large eggs
1/2 cup corn oil
1/4 cup thick coconut milk
1 tsp vanilla extract
5 1/2 oz ripe papaya (mash)
1/2 fresh grated coconut



1/  Pre heat oven to 170 deg c
2/  Sift flour and baking soda, keep aside.
3/  Beat egg and sugar until fluffy.
4/  Add corn oil,salt, coconut milk, vanilla extract, papaya, grated coconut and mix well.
5/  Add flour and mix till well blend.
6/  Scoop into cupcake liners 3/4 full and bake 20 mins or until cook.
7/  Remove from oven and cool on wire rack
8/  Spread icing on top of cupcake and top with fresh grated coconut.Decorate as desire.



Butter Cream
Ingredients
100gm  butter
1 cup  icing sugar
2 tbsp milk
1 tsp vanilla extract
Fresh grated coconut

1/  Sift icing sugar 3 times.
2/  Beat butter till creamy, add icing sugar and mix well.
3/  Add milk and vanilla and beat until light and creamy.
4/  If too stiff add more milk.
5/  Spread on cupcake and sprinkle with fresh grated coconut.
