Lime or lemon are a good source of vitamins, minerals and antioxidants, which may help aid in digestion, respiration and the prevention of cancer.

Lime  like all citrus fruits are rich in vitamin C. Just 100mls of lime juice has 38mg of vitamin C, more than the 30mg recommended daily intake. Lime are also a good source of pectin which can help reduce blood cholesterol.

Cut half of the citrus fruit, squeeze out the juice, mix with half glass of warm water. Drink in the morning half and hour before breakfast.

8) Lemon/lime water has an alkalizing effect in the body as it is buffered. Even if you drink it just before any meal, it will help your body maintain a higher pH than if you didn't drink it. The higher or more alkaline your pH, the more your inner terrain is resistant to minor and major disease.

9) Helps dilute uric acid, which if it accumulates it creates arthritic pain or gout.

Coconut Lime Square




1/  Preheat oven at 180 deg c
2/  Sift flour, add sugar and coconut, mix well.
3/  Cut butter into small cube, rub with your finger tips to resembles bread crumbs.
4/  Knead lightly into a dough.
5/  Grease a 20cm square pan, pat the dough evenly into prepared pan..
6/  Bake for 20 mins, remove form oven, pour the custard over the crust and bake for 20 mins.
7/  Sprinkle toasted coconut and bake at 150 deg c for 10 mins or until custard set.
8/  Cool completely, chill in fridge  for 1 hour and cut  into 5cm square. Decorate with a small slice of cut lime.


1/  Beat eggs and sugar lightly.
2/  Add flour, lemon juice, lemon zest and mixed until well blend.
3/  Pour custard mixture over the crust and bake for 20 mins.
4/  Sprinkle toasted coconut and bake at 150 deg c for 10 mins or until custard set.
5/  Cool completely, chilled in fridge for 1 hour and cut into 5cm square.
Decorate with a small slice of cut lime.

Papaya Coconut Cupcakes

Sometimes it's hard to understand but time tells the truth.

Papaya  Coconut Cupcake


Ingredients
2 cups flour
1 tsp baking soda
1/4 salt
1 cup sugar
2 large eggs
1/2 cup corn oil
1/4 cup thick coconut milk
1 tsp vanilla extract
5 1/2 oz ripe papaya (mash)
1/2 fresh grated coconut



1/  Pre heat oven to 170 deg c
2/  Sift flour and baking soda, keep aside.
3/  Beat egg and sugar until fluffy.
4/  Add corn oil,salt, coconut milk, vanilla extract, papaya, grated coconut and mix well.
5/  Add flour and mix till well blend.
6/  Scoop into cupcake liners 3/4 full and bake 20 mins or until cook.
7/  Remove from oven and cool on wire rack
8/  Spread icing on top of cupcake and top with fresh grated coconut.Decorate as desire.



Butter Cream
Ingredients
100gm  butter
1 cup  icing sugar
2 tbsp milk
1 tsp vanilla extract
Fresh grated coconut

1/  Sift icing sugar 3 times.
2/  Beat butter till creamy, add icing sugar and mix well.
3/  Add milk and vanilla and beat until light and creamy.
4/  If too stiff add more milk.
5/  Spread on cupcake and sprinkle with fresh grated coconut.

"Shave Ice" this treat is guaranteed to bring smiles to the faces of each and every one.
Shave ice is an ice-based dessert made by shaving a block of ice. Shaving produces a very fine ice that appears snow-like.

This extremely fine texture causes syrups added to it to be absorbed by the ice rather than simply surrounding it. Properly made shave ice  rarely requires a straw, since the flavors are in the ice and not at the bottom of the cup.
